There are at least half a dozen variations of Fried Rice in China. Besides the basic ingredient of rice, other items such as
egg, prawns, chicken, mushrooms, bamboo shoots and green peas etc can be added singly or in various combinations as desired.
You would need:
225g/8oz long grain rice
100g/4oz cooked meat (chicken, ham or pork)
1 spring onion, finely chopped
1 tbsp salt
3 tbsp oil
50g/2oz green peas
50g/2oz of peeled shrimps
1 tbsp rice wine
1 tbsp Light Soy Sauce
1. Cook the rice well in advance so that it is cold before frying.
2. Dice the meat into small cubes about the size of the peas. Finely chop the spring onion. Lightly beat the eggs
with a pinch of salt and a few pieces of spring onion.
3. Heat half of the oil in a very hot wok or frying pan and stir fry the peas, prawns and meat for about 1 minute,
then add the wine and soy sauce, continue stirring for another minute, remove and keep warm.
4. Heat the remaining oil and lightly scramble the beaten eggs. Add the cooked rice and stir to make sure that
each grain of rice is separated, then add salt and spring onions with the cooked mixture. Blend well and serve hot or cold.
