You would need:
275g/10oz headless, unshelled prawns
1 tsp salt
1 litre/2 pints water
2 spring onions, thinly shredded
2-3 slices fresh ginger root, peeled and thinly shredded
1-2 green or red chillies, seeded and thinly shredded
1 tbsp vegetable oil
2 tbsp Light Soy Sauce
1 tbsp Rice Vinegar (red or white)
1 tsp Sesame Oil
1. Thoroughly defrost and clean the prawns. Poach them in a pan of salted boiling water for 1 minute only, then turn off
the heat and leave the prawns in the hot water for another minute before removing and draining.
2. Place the spring onions, ginger and chillies in a small heatproof bowl. Heat the oil until hot and pour over them.
Add the soy sauce, vinegar and sesame oil, stir to blend well.
3. To serve, each person picks up a prawn with fingers, peel off the shell, leaving the tail piece on as a handle, and
dips the prawn into the sauce before eating
