Like noodles in soup, this is a basic recipe for fried noodles - you can use different items for the "dressing" as you wish
You would need:
3-4 fresh scallops
1/2 egg white, lightly beaten
2 tsp cornflour mixed with 1 tbsp water
250g/9oz Egg Noodles
5-6 tbsp oil
100g/4oz French beans or mangetout peas
1 tsp salt
1 tsp sugar
2 tbsp rice wine
2 tbsp Light Soy Sauce
1-2 spring onions,finely shredded
1 tsp Sesame Oil
1. Clean the squid and score the inside in a criss-cross pattern, then cut into pieces about the size of
a large postage stamp. Blanch in a pan of boiling water until all pieces curl up, rinse in cold water and drain.
2. Cut each scallop into 3-4 slices. Shell the prawns and depending on their size, leave them whole if small, or
cut each into 2-3 pieces. Mix with the egg white and cornflour and water mixture.
3. Cook the noodles in a pan of boiling water for about 3-4 minutes, drain and rinse in cold water, mix with about 1 tbsp oil.
4. Heat about 2-3 tbsp oil in a pre-heated wok or a very lage frying pan, add the vegetable and seafood, stir fry for about 2 minutes, then add the salt, sugar, soy sauce,
wine and about half of the sping onions; continue stirring for another minute . Remove and keep warm as the "dressing".
5.Heat the remaining oil, add the noodles and stir fry for 2-3 minutes with about half of the "dressing", remove to a large serving dish , pour the remaining "dressing"
on top and garnish with spring onions and with chilli sauce.
