You would need:
1kg/2 1/4lb pork spare ribs
225g/8oz Hoi Sin (Barbecue) Sauce
1. Trim off any excess fat from the ribs and cut into individual pieces. Add Hoi Sin sauce and marinade in a shallow dish for
2-3 hours, turning occasionally.
2. Barbecue on a hot grid for 15-20 minutes, turning frequently, and basting with marinade. Or alternatively, roast the ribs in a
baking dish in a pre-heated oven (240C/475F/Gas9) for 15 minutes, then reduce the heat to 200C/400F/Gas6 for 30-35 minutes, turning once or
3. To serve: ideally, chop each rib into 2 or 3 bite size pieces and pour the sauce over them, serve hot or cold.
